Healthy Sesame Rice Noodles with Mange Tout & Radishes
I often make this for my lunch as it takes about 5 minutes to prepare and there is no cooking invovled. All you need is a microwave! It's so simple but tasty and a really light, healthy option for you to have.
Ingredients:
• 1 Pack of Stir Fry Rice Noodles
• 1 Pack of Mange Tout
• 1 Pack of Radishes
• Jar of Sesame Seeds
• Bottle of Sesame Seed Oil
• Soy Source
• Handful of Corriander
• Lime
Method:
1. Depending on how much rice noodles you want, depending on how hungry you are, place them in a bowl and put them in the microwave to heat up for 1 minute. Once done, take out and drizzle some soy source and sesame seed oil over the top and mix until it coats the noodles.
2. Grab a chopping board and a sharp knife and get about 20 mange tout's, depending again on how much you want to eat! Slice length ways in thin strips and place on top of the noodles. Do the same for the radishes but you'll only need about 4.
3. Chop up the corriander and spinkle on top. Then grab the sesame seeds and do the same. Finish off the dish with a final drizzle of sesame seed oil and a squeeze of lime juice and you're done!
* If you want to add another vegetable, why not use thinly sliced, flash fried broccoli!
