Gnocchi with Blue Cheese & Rocket

After having a late lunch today, and with everyone out of the house this evening I needed something small, quick and easy to cook for dinner. Pre made gnocchi is so simple to make and can be delicious. Adding classical italian ingredients really lifts this dish and was absolutely delicious.

Ingredients:

• 500g Gnocchi

• 125g Frozen Peas

• 1Clove of Garlic, finely chopped

• Chopped Fresh Parsely

• 45g Rocket

• 75g Dolcelatte Blue Cheese

• 2 tbsp Pine Nuts, toasted

Method:

1.Cook the gnocchi in a large pan of boiling water for 1 minute. Add the frozen peas and cook for a further 2 minutes. Meanwhile, heat some oil in a small saucepan and add the garlic. Cook gently for 1 minute, but don't let the garlic brown.

2. Drain the gnocchi and peas and tip into the frying pan and turn up the heat. This helps crisp the gnocchi up a lttle bit giving some texture. Stir occasionally so it doesn't stick.

3. Place onto a plate and scatter over chunks of the creamy blue cheese, toasted pine nuts, chopped parsely and the rocket. Finally add a drizzle of olive oil to finish it off.

And that's it! It really is so simple, taking just 15 mins from packet to plate, and there is really nothing more satisfying then melted blue cheese over garlicky pan fried gnocchi. Enjoy!
